Terrific Tomato Topping! *all organic ingredients if possible
-6 Roma tomatoes or any tomatoes that are available and taste fresh!
-4 cloves of garlic (finely minced)
-1 large white/brown/yellow onion (minced)
-handful of fresh basil leaves
-salt and pepper
-3 tbsp good quality organic olive oil
-1/2 cup of Parmesan cheese (grated or powder) *whatever is around
In a small frying pan, over medium heat, add a 1 tbsp of olive oil (I know you are not supposed to heat olive oil, so if you have something like sunflower or canola oil that would be better, do not use coconut oil), let it heat for about 1 min and then add the minced onion. You want to caramelize the onion, so low and slow for this. Even out the onion and slowly brown, mixing every couple minutes, turning down the heat if they start to turn dark brown (that means it\’s to hot!). While the onions are cooking, cut the tomatoes into 1cm by 1cm chunks and add to side bowl (serving bowl). After about 10 mins of mixing and browning onions they should be a nice, even golden brown color. At this point add the minced garlic and fry until fragrant (1-2 mins) turn off heat. Add the warm onion+garlic mixture to the tomatoes and stir in. Add the parmesan cheese and basil (rip with your hands into small, chunky pieces). Add salt and pepper to desired taste and serve with slices of cucumbers, on steak chunks to make a nice salad topper, add to chicken or fish, its greats with everything!! Add balsamic reduction to any plate to add some acidicity! Great creative! This is an amazing dish for the next day because all the favours really come together when stored in the fridge.
