Hemponut Pancakes!

Hemponut Pancakes!  (no grain pancakes)
-4 organic eggs
-2 tsp of vanilla extract
-1 1/4 cup of sweetened or unsweetened almond milk
-1/2 cup of coconut flour
-2 tsp of hemp flour
-1 tbsp of hemp hearts
-1/2 tsp of cinnamon
-1 tbsp of coconut oil for frying
Start by combining eggs, vanilla extract and almond milk in medium sized bowl.  Blend until mixture is frothy using a hand-blender.  Add in the coconut flour, hemp flour, hemp hearts and cinnamon.  Use hand blender again until texture is smooth (no lumps). In medium pan, over medium heat, add coconut oil until melted, then, using a ladle, add pancake mix to pan. Each pancake should only be about the size of your palm.  Give the pan a slight shake to even out batter.  If the edges of the pancakes start to get too brown (starting to burn), lower heat to med-low. When the outer edges of the pancakes are visibly firm (should be brown, not burnt), use a spactual (preferably a thin and metal) to flip. Pancakes are done when both sides are golden brown (about 2-3mins each side). These pancakes will not be as fluffy  as regular flour pancakes, but they taste great (have a coconut after-taste), and they are packed with protein for a morning kick start!  Top with maple syrup, bananas and crushed almond for a nice contrast of sweet, soft and crunchy. Berries with fresh mint is a nice topper too! Get creative!  Hope you enjoy this recipe and remember, be aware and eat with care 🙂
