Kale Scambleeed Eggs and Ultimate Brekkie Smoothie!!

Kale Scambleeed Eggs:
-3 organic eggs (2 with yolks, 1 only egg white if you want more protein without the fat)
-2 organic chicken/turkey brekkie sausages
-handful of washed, slightly chopped organic kale (any type)
-1 clove organic garlic (minced finely)
-tsp of rice bran oil, organic hemp seed oil or organic coconut oil
In a small frying pan, fry the garlic over medium high heat.  When fragrant, add sausage and cook until not pink in the middle (5mins).  Add kale and sauté (1 min). Crack in 2 eggs with yokes, add 1 more egg without yoke, if wanted. Using a spatula stir eggs, kale, sausage, garlic all together until eggs go from translucent and fluid, to firm and opaque (3-4mins).  Turn off heat and put frying pan contents on to plate.  Add tomato sauce (ketchup), salt and pepper, or any sauce you like, if you want.  I enjoy antipasto on my Kale Scrambleeed Eggs, gives it a pickled contrasting taste to the veggie goodness of the kale, and the saltiness of the sausage. Hope you enjoy this recipe, and be aware and eat with care 🙂
Ultimate Brekkie Smoothie!!  (all contents except almond milk are organically sourced)
-1/2 banana
-handful of frozen blueberries
-5 frozen raspberries and blackberries
-2 tbsp of hemp hearts
-1 tbsp of cacao powder (pure chocolate powder- high in antioxidants)
-1/2 avocado
-1/2 carrot
-handful of frozen or fresh kale
-1 cup of unsweetened almond milk
-1/2 cup of water (Britta filtered if possible)
Blend all ingredients with hand blender or regular bender until smooth.  This smoothie is super packed with nutrients, and is great for breakfast or a snack.  Not going to lie, it does not taste like Booster Juice Smoothies, those are packed with sugar from fruit juice which is high in fructose (not good for you).  If you want to make it sweeter please use something like Stevia (1 package) or honey (1 tbsp).  Drink and enjoy!! And always remember, be aware and eat with care 🙂
