Granolishious!!:
Tasty and simple Granola recipe:
-5 cups of old fashion rolled oats
-1 tsp cinnamon
-1/2 cup of almonds (chopped fine by food processor)
-1/2 cup of maple syrup (Canadian please!)
-pinch of salt
-1/2 cup of coconut oil  (heat in small pot until liquid if solid) + another 1 tbsp for baking tray surface
-3 tsp of vanilla extract
-1/2 cup of mixed dried fruit
Pre-heat oven to 165 Celcius. While waiting, in a large mixing bowl add the wet ingredients: coconut oil, maple syrup and vanilla.  Also, add the cinnamon and salt.  Give this a quick mix. Add in the oats and almonds and mix with your hands (washed first please!), mix until oats are covered with wet ingredients.  Wash hands off.  On a large baking sheet, add the 1 tbsp of coconut oil and wipe around (this will make sure the granola doesn\’t stick).  Add contents of bowl on to the baking sheet, spread the mixture out evenly and press it down with a spatula so it becomes slightly compact on the tray.  Then place in middle of oven rack.  Bake for 20 mins, then rotate pan, bake for another 20 mins.  Granola should turn a golden brown. Take it out and let it cool for about 30 mins. Use a spatula to break up the granola and transfer into a bowl, add the mixed dried fruit. Have fun trying to not eat this when its come out of the oven, it smells amazing!!  Store in an air-tight container for weeks!  Add yogurt, berries, milk, or just have it on its own as a snack.  The mixed dried fruit can be any you prefer, add different nuts if you don\’t want almonds, its a mix and match recipe!  I made this for my family and friends for a Christmas present last year and they loved it.  You can make it with gluten free oats as well!  Hope you enjoy this recipe.  Thanks and be aware and eat with care 🙂
