Cocomato Soup: *serves 4
-1 cup of mixed lentils (soaked overnight or for at least 4 hours in cool water)
-2 tbsp of garam masala spice
-1.5 vegetable bouillon cubes
-1/2 red pepper (chopped rough)
-1/2 onion (yellow or brown)
-2 garlic cloves (peeled, leave whole)
-2 tbsp of olive oil or ghee
-1 can of light coconut milk
-1 can diced tomatos
-1/2 cup of water
-fresh coriander for garnish
In a blender or food processor combine the red pepper, oil of choice, onion and garlic, until a runny paste consistency. In a large pot, add this mixture, and cook on medium-high heat while stirring slowly (3-5mins). Add the garam masala spice, and cook for another 1 min. Add the lentils (drained and rinsed of soaking water), as well as all other ingredients. Stir together and bring to a boil. When a boil is reached, turn the heat down to simmer and pop a lid on. Simmer for 30 mins, or until lentils are soft. Serve and enjoy! This recipe was something I made up on a rainy day because I really wanted tomato soup, but I also wanted coconut, so cocomato soup was born! Hope you enjoy! Thanks, and be aware and eat with care 🙂
